
Calling all chocolate lovers and budding chocolatiers. Manufacture Belge de Chocolats’ brand Rosalie’s – in association with The Moodie Davitt Report – is offering you the chance to bring your ideas to reality through a competition which culminates at TFWA Asia Pacific Exhibition in Singapore in May.
The competition follows the success of a related Dream Chocolate challenge leading up to TFWA World Exhibition in Cannes last year.


The rules for the latest competition are simple:
Create your dream chocolate recipe, individually, or as part of a team, and send your ideas to Rosalie’s Chef Chocolatier, Noel LeJeune, via this link. As Rosalie’s notes, “if you are bursting with ideas, you can submit multiple recipes”.
Entrants must work in the travel retail industry. The only restriction is that recipes should not contain either alcohol or peanuts. By submitting a recipe you accept that you have no copyright over any ingredient(s) used. The decision of the Chef Chocolatier is final.
He will select the top recipe, based on creativity and taste, and will create the dream chocolate for the chosen winner. The winner will receive a personalised gift box containing their creation, which will be produced for them on a one-off basis, alongside a collection of Rosalie’s products.
The winner will be celebrated at Traveller’s Trove stand (Basement 2, M02) at the TFWA Asia Pacific event in Singapore at 5.30pm on Tuesday 9 May where the winning recipe will be available for sampling.

In the Cannes competition, Dubai-based Lagardère Travel Retail Category Manager Confectionery & Gastronomy Tirthaa Chatterjee was among the winners, with her Yin & Yang chocolates which featured bergamot, turmeric and pure nigella seeds.
Con Barbayannis of Crown Duty Free was also a winner with a recipe featuring a chocolate centre with vanilla essence, honeycomb and a hint of cinnamon, in a dark shell with a touch of carrot extract providing colour.
MEADFA Operations Manager Micheline (El Ammar) Enkiri’s winning entry, ‘Arabian Bliss’, combined dark chocolate with pistachio, coffee and cardamom.
