SSP wins US$274 million contract at Copenhagen Airport

DENMARK. Leading F&B concessionaire SSP has secured a seven-year contract at Copenhagen Airport. The new deal, said to be worth £170 million (US$274 million), will herald the introduction of two popular city restaurants, MASH and Le Sommelier, to the airport.

Le Sommelier Wine Bar and Bistro offers modern French cuisine such as steamed mussels, fried foie gras, breast of duck and créme brulée. MASH (Modern American Steak House), developed by Danish sommeliers and restaurateurs Jesper Boelskifte, Eric Gimmel and Rasmus Oubaek, was designed to bring the style and quality of a New York steakhouse to Denmark and offers dishes such as Ribeye and Porterhouse steaks.

In addition to these concepts, SSP is to open two new free-flow outlets called Food Market and More. The concessionaire will join forces with a team of high-profile Danish chefs to develop a diverse menu, featuring soups, sandwiches, salads and pastries alongside a selection of pizzas, burgers and other hot dishes.

Copenhagen Airports Vice President Carsten Nørland said: “When we were looking to refresh our food & beverage offer, we wanted to incorporate a good mix of international names and “˜local heroes’. SSP was able to introduce two strong Copenhagen brands that have long been on our ‘wish list’.
