HMSHost adds Publican Tavern to F&B options at Chicago O’Hare

USA. HMSHost has opened the Publican Tavern at Chicago O’Hare International Airport Terminal 3.

The new outlet, in partnership with One Off Hospitality Group and the Chicago Department of Aviation, is based on the popular The Publican in Chicago’s Fulton Market District.

Chicago Department of Aviation Commissioner Ginger S. Evans said: “Publican Tavern continues O’Hare International Airport’s tradition of being not only one of the world’s best airports, but a dining destination for travellers.”

With a focus on seasonality and quality sourcing, Publican Tavern’s menu includes sandwiches and salads, spicy pork rinds, avocado salad, organic baked salmon and Doug Sohn made with Hot Doug’s bratwurst, bourbon mustard, fried shallot and Emmental cheese.

Breakfast and kids’ menus are available. Publican Tavern’s beverages focus on Chicago craft beers; its wine list is European influenced and includes a selection of Midwestern offerings.

Publican Tavern is said to combine old world beer hall traditions with contemporary design. It features its namesake’s globe lights, textured brass and unglazed red brick walls.
