SSP America combines local and national flavours in Phoenix Sky Harbor openings

USA. SSP America says “sense of place, taste of place and commitment to the community” underpin six new openings at Phoenix Sky Harbor International Airport’s John S. McCain III Terminal 3 this month (January).

As reported, the airport recently opened the latest phase of its US$590 million modernisation programme at the terminal, featuring a new South Concourse and airside lobby area. SSP America and HMSHost hold food & beverage contracts at the terminal, while Dufry-owned Hudson and Stellar Retail Group PHX were awarded retail contracts.

SSP America said its F&B portfolio at the terminal features a mix of local and chef-driven brands as well as “popular, forward-thinking” national brands.

The new South Concourse in Terminal 3 features SSP America’s Tarbell’s Tavern and Christopher’s restaurants.

Original ChopShop, Überrito Fresh Mex and The Habit Burger Grill are located in the airside lobby. Original ChopShop is described by SSP America as a neighbourhood eatery crafting “feel good food” from whole ingredients.

The menu offers protein bowls, salads, sandwiches, acai and pitaya superfruit bowls, fresh-squeezed juices, and protein shakes, all made from scratch on-site. The brand’s first location opened in Old Town Scottsdale, Arizona in 2013.

Überrito Fresh Mex aims to offer flavour combinations that can’t be found anywhere else. It serves burritos, bowls, salads and nachos, using fresh ingredients.

The Habit Burger Grill is a burger-centric, fast casual restaurant concept. It specialises in preparing fresh, made-to-order chargrilled burgers and sandwiches featuring USDA choice tri-tip steak, grilled chicken and sushi-grade tuna cooked over an open flame. Made-to-order salads and a selection of sides, shakes and malts are also available.

Tarbell’s Tavern and Christopher’s are located in the South Concourse. Chef Mark Tarbell is the face behind Tarbell’s Tavern, which aims to offer “a relaxed and approachable foodie oasis” and is based on the original downtown location.

The restaurant serves fresh-forward, chef-driven plates in a fast and casual environment and features a large wine retail component that offers handpicked, premium wines for purchase.

The upgraded Terminal 3 is named to honour John S. McCain III, the US senator and military officer who died in August 2018.

Chef and restaurateur Christopher Gross’s Christopher’s restaurant serves handcrafted cocktails, local and international brews, handpicked wines by beverage director Paola Embry, and chef-driven gourmand plates.

In the ticketing area, Peet’s Coffee will serve freshly roasted, craft coffee prepared from selectively sourced beans that are hand-roasted in small batches. An adjacent retail element will offer key conveniences such as bestselling newspapers, magazines, books, travel related sundries, luggage, souvenirs and gifts.

The company began operations at Phoenix Sky Harbor’s Terminal 4 in 2013 with a 10-year contract which includes 18 Phoenix area-based local businesses and five national brands across 26 individual restaurants.
