OTG blends animation, design and flavour to serve up a touch of Tokyo at Newark Liberty

USA. OTG has created a 40ft art installation wrapped in an LED mesh display as the centrepiece for a Tokyo-inspired opening at Newark Liberty International Airport.

Kaedama is described as an immersive ramen noodle bar and is located in Terminal C’s C1 Global Bazaar. Its name is derived from the Japanese term for requesting a second serving of noodles.

The concept’s look and feel was imagined by OTG design partner Rockwell Group. The space is inspired by the streets of Tokyo and features a six-point, star-shaped counter that wraps around an elevated open kitchen, which provides an element of theatre to the dining experience.

The noodle-inspired art installation centrepiece comprises some 17,000 lights. The gold tower is intended as a nod to Tokyo’s brightly-lit city signage, and features an array of custom Japanese-inspired animations that transition throughout the day (see video).

Dishes include traditional & fusion ramen noodles, small plates, soups and dumplings. Menu highlights include Peking Duck Tacos; Firecracker Dumplings; Rice Bowls with fresh ahi tuna, salmon, octopus or Peking duck; and Ramen options ranging from Fried Chicken Shoyu to Pork Tonkostu.

Kaedama, as with OTG’s other restaurant locations, features iPads at each seat (pictured below). Customers can track their flights with real-time flight notifications, order food and amenities from a visual menu, and play games.
