“A well-deserved moment of relaxation”: HMSHost brings Bistrot concept to North America

CANADA. HMSHost has taken its Bistrot concept to North America with two openings at Montréal–Pierre Elliott Trudeau International Airport.

Bistrot combines an “international approach and an intense passion for good, clean, and fair artisanal products that enhance the regional ingredients and recipes created”, HMSHost said. It is styled as an urban market that showcases multiple food stations including a bakery, street food fare, a fresh pasta station, a juice bar, and a café.

At Montréal–Pierre Elliott Trudeau, two Bistrot outlets have opened: one in the post-security departures area near gate 48 and another near gate 59.

“We are delighted to be adding this outstanding international banner to our growing and increasingly diverse list of commercial offerings,” said Aéroports de Montréal President and Chief Executive Officer Philippe Rainville. “Our goal is to offer a wide range of options to our passengers, with a balanced mix of local and international brands. Not only are these the first Bistrot locations in North America, but they will be the first at Montréal-Trudeau to offer fresh pasta, further meeting our customers’ needs.”

The Bistro concept was developed by Pollenzo University of Gastronomic Sciences and HMSHost’s parent company Autogrill Group. It began in Italy and there are now 12 locations in Europe, with 20 more slated for 2017.
