OTG brings new taste experience to Delta at Minneapolis-St. Paul Airport

US. US restaurateur OTG this week introduced an array of new food & beverage and retail concepts to the Delta Concourse G at Minneapolis-St. Paul Airport (MSP), the first phase of an ambitous commercial development.

OTG crew worked through New Year’s Eve to construct the new spaces, which opened for business the following morning.

“It is remarkable to see the overnight transformation of the concourse, and exciting to know that this is the start of something special,” said OTG CEO Rick Blatstein. “Everything about this programme was developed with the traveller in mind.”

The project will roll out on a phased basis throughout the year. Temporary programmes to have made their debut include:

Taste of Custom Burger features a custom beef blend using regional farm-sourced meats. Chef Erick Harcey created burgers for the menu, including veggie, turkey and fish burger options, as well as house-made milkshakes and fried pickles.

Taste of Tagliare: Tagliare offers classic pizza by the slice or by the pie, based throughout the day using fresh ingredients.

Taste of Shoyu: A concept devised by Chef Koshiki Yonemura Smith, Shoyu, is a modern Japanese menu featuring fresh ingredients and celebrating traditional techniques.

Taste of World Bean: At MSP, Minneapolis’ own Dogwood Coffee Company is the premier micro-roaster for World Bean. World Bean also features a selection of whole-leaf teas. Bill Waddington, owner of tea retailer TeaSource, has selected the seasonal teas and will guide baristas on correct brewing techniques.

Taste of Mill City Tavern: Mill City Tavern is “˜a reflection of the wealth of Midwestern farms and artisan purveyors, and inspired by Chef Lenny Russo’s commitment to fresh, local ingredients’.

Cibo Express Gourmet Markets: These markets feature a variety of freshly-prepared products and bottled beverages allowing passengers to take food on board their flights. The markets also celebrate local and artisan foods, and provide both traditional and innovative retail products.

At this store, passengers can purchase classic pizza from Tagliare, regional farm-sourced burgers from Custom Burger and freshly-prepared food products and bottled beverages from Cibo Express Gourmet Markets


These temporary stores preview the new concepts that will transform the concourse as permanent installations are phased in over the next 12-18 months.

The Delta MSP Experience by OTG was first announced by The Foodie Report in May 2011, and since then the concessionaire said there has been an incredible amount of planning and coordination with all stakeholders to make the New Year debut possible.
